Pumpkin and Apple Soup.

 SERVES  4 - 6

INGREDIENTS

  • 2 onions
       (peeled and chopped)
  • 1 clove garlic
       (peeled and crushed)
  • 1 tablespoon Olive Oil
  • 1 lb pumpkin
       (skinned, seeded and cubed)
  • 2 baking apples
       (peeled, cored and chopped)
  • 1 pt vegetable stock
  • ½ pt dry cider or apple juice
  • 2 sprigs fresh sage
       (chopped)
  • Salt and Pepper


DIRECTIONS

  1. Heat the oil in a large saucepan and add the onions and garlic.
  2. Cook for a couple of minutes and then add the pumpkin cubes, chopped apple and sage.
  3. Cook for another couple of minutes, season with the salt and pepper and add the vegetable stock and cider or apple juice.
  4. Bring to the boil, cover and simmer for 15 - 20 minutes untill the ingredients are tender.
  5. Whizz in a blender or food processor and serve piping hot with fresh crusty bread or rolls.

For a creamier soup top with some cream when serving.
